Performance-Enhancing Backyard BBQ Recipes
If there is one thing that is synonymous with the 4th of July, it is a backyard BBQ. How do you make your holiday celebration tasty, fun AND performance-enhancing? Here are few recipes that are exploding with all three.
1. Tandoori Chicken Kabobs
Who wants plain old chicken breast sandwiches when you have these? The best part is you can use the marinade on vegetables or tofu too!
2. Island Rice Pilaf
To me, this SCREAMS summer. I have made this more times than I care to admit...it is just too delicious. Plus it is vegan - added bonus.
3. Summer Vegetable Pasta Salad
It is a traditional pasta salad gone veggie-fied! And it has a homemade vinagraitte that is easy to make. Check it out!
4. Chipotle Peach Salsa
Who knew chips and salsa could taste so good? Forget the jarred dollar salsa and try this instead. Since I don't care for spicy food, I like that I can adjust how much chipotle pepper is added. And don't just dip chips - try veggies too! Mini sweet peppers are delish with this salsa.
5. Fruit Kabobs
No fancy recipe here. Just "kabob" pieces of fresh fruit and set out on a platter for all to enjoy (buy wooden kabobs for this project). Easy to eat, fresh and satisfying. Go red, white and blue by using strawberries, melon (okay so maybe white/green-ish) and blueberries.
6. Dessert: Raspberry Oat Bars
Get all the sweet with extra nutrients too. Follow this great recipe, but substituted old-fashioned oats (for quick-cooking) and whole wheat flour (for white) for added fiber, vitamins and minerals.
While you may be thinking that these recipes look like too much work, consider that they are easy, quick, cheap and much healthier than most alternatives. So put your health and performance first this weekend. Gather friends and family around the kitchen or grill. I promise these recipes will not disappoint!
